Easy Cocoa Cake

An easy Chocolate Cake recipe that is pretty much fool proof. Just 10 minutes preparation, followed by a 30 minute bake and you've got 9 servings of a chocolate cake that is so moist it doesn't need icing.

Ingredients:
(Serves 9)

  • 1½ cups all-purpose flour
  • 1 cup sugar
  • 3 tablespoons baking cocoa
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ⅓ cup canola oil
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla extract
  • 1 cup cold water
  • Confectioners' sugar

Directions:
(Preparation: 10 Minutes. Cooking: 30 minutes)

  2. Preheat oven to 350° F.
  3. In a large bowl, whisk flour, sugar, cocoa, baking soda and salt.
  4. Using a spoon, make 3 wells in the dry ingredients. Pour oil into the first, vinegar into another and vanilla into the third
  5. Slowly pour water over all.
  6. Beat on low speed until thoroughly combined. Batter will be thin.  (I used a hand whisk to beat the batter.)
  7. Pour into a greased 8-in. square baking dish. (This time I used a round 8 inch spring form.) Bake until a toothpick inserted in the center comes out clean, 30-35 minutes.
  8. Cool in pan on a wire rack. Dust with confectioners' sugar.

Not too sweet and easy to make.
